Abstract

This study examines the role of Supply Chain Management (SCM) in improving operational performance in the food industry through a Systematic Literature Review (SLR). Following the PRISMA protocol, the review analyzed Scopus-indexed peer-reviewed articles and identified 28 eligible empirical studies. The findings show that integration, collaboration, and coordination are the most consistent SCM practices in improving cost efficiency, delivery reliability, product quality, waste reduction, and operational responsiveness. The literature also indicates a shift from efficiency-oriented SCM toward SCM as a strategic capability emphasizing digitalization, traceability, resilience, and sustainability. Furthermore, the SCM–operational performance relationship is context-dependent and shaped by firm size, digital maturity, and institutional pressure. The review identifies three major gaps: limited evidence in SME contexts, weak sustainability–digitalization integration, and a lack of longitudinal studies. This study repositions SCM as an adaptive and resilient capability essential for strengthening operational performance in the food industry.
